Chorizo Enchiladas Recipe

Ingredients
  • 2 c beef broth .
  • 2 tsps garlic powder .
  • 1 tsp dried parsley .
  • 1 jalapeno pepper .
  • 1 (6 oz) can tomato paste .
  • 1/2 tsp dried basil .
  • 1 c mozzarella cheese (grated) .
  • 1/4 c salsa .
  • 1/2 tsp ground cumin .
  • 1 tbsp chili powder .
  • 1/2 tsp ground black pepper .
  • 1 lb chorizo sausage (mild) .
  • 8 large flour tortillas .
  • 1 green pepper .
  • 1/2 tsp dried oregano .
  • Enchilada Sauce .
  • 1 c cheddar cheese (grated) .
  • 1/8 tsp salt .
  • 1 tsp onion powder

Directions
  • Step #1 .
  • Step #2 Remove sausages from casings.
  • Step #3 Finely chop jalapeno pepper.
  • Step #4 Dice green pepper.
  • Step #5 Fry sausages & peppers until peppers are limp & meat is thoroughly cooked.
  • Step #6 You may add 1/2 c of water & cook on medium until water has evaporated.
  • Step #7 Take a tortilla, cover 2/3 of it lightly with the shredded mozerella cheese, then roll up the tortilla & place it in the casserole pan.
  • Step #8 Continue until all tortillas are filled & rolled.
  • Step #9 In a small saucepan, mix all the sauce ingredients & let simmer for 15 mins.
  • Step #10 Cover up with Red Enchilada sauce, making sure each enchilada is thoroughly coated.
  • Step #11 Cover up the whole casserole with grated cheddar cheese.
  • Step #12 Put the casserole in the oven for 30 mins or until the cheese melts & the sauce is bubbling.
