Taco Soup Recipe

Ingredients
  • 1 (15 oz) can black beans .
  • 1 (15 oz) can pinto beans .
  • 1 (15 oz) can sliced tomatoes .
  • 1 (1 1/4 oz) packet taco seasoning .
  • 1 lb ground beef .
  • salt & pepper .
  • 1-2 quart V8 vegetable juice .
  • 1 (15 oz) can kidney beans .
  • 1 (15 oz) can corn .
  • 1 (7 oz) can rotel .
  • 1 (1 oz) packet ranch dressing mix .
  • 1 onion, sliced .
  • 2 garlic cloves, minced

Directions
  • Step #1 In skillet, cook ground beef & onion together until done, add minced garlic last couple mins of cooking.
  • Step #2 Drain off grease.
  • Step #3 Add veggies & meat mixture in large soup pot - DO NOT DRAIN canned vegetables, pour them in liquid & all.
  • Step #4 Add seasonings & V-8 juice, add juice to desired consistency, using more or less than recommended to suite your taste.
  • Step #5 Simmer 3 to 4 hrs.
  • Step #6 Serve with crushed tortilla chips, sour cream & shredded cheddar cheese.
  • Step #7 Optional topping are endless - fresh cilantro (if you like that stuff), black olives, chives, etc.
