Bay Mussels In White Wine Recipe

Ingredients
  • 1 c dry white wine .
  • 2 tbsps fresh basil, finely sliced .
  • 2 tbsps extra virgin olive oil .
  • 1/4 c scallions, finely sliced .
  • 1/2 tsp dried oregano .
  • black pepper, to taste .
  • 1/4 c shallots, minced .
  • 3 lbs mussels, rinsed .
  • 4 garlic cloves, minced .
  • 2 tbsps fresh flat leaf parsley, finely sliced .
  • 1/2 c salted butter

Directions
  • Step #1 In a large pot, saute garlic & shallots in butter & oil over med-heat/flame for about 5 mins until they are lightly browned.
  • Step #2 Add scallions & cook for one more min.
  • Step #3 Add wine, parsley, basil, oregano & pepper.
  • Step #4 Simmer for another min & add the mussels.
  • Step #5 Cover up & let simmer over med-heat/flame for 7-8 mins, until the mussels open, stirring half way through; discard any unopened mussels.
