Creamy Rice Pudding Recipe

Ingredients
  • 2/3 c golden raisins
  • 1/2 tsp vanilla extract
  • 1 tbsp butter
  • 1 egg, beaten
  • 1/4 tsp salt
  • 3/4 c uncooked white rice
  • 1/3 c white sugar
  • 2 c milk, divided

Directions
  • Step #1 In a medium saucepan, bring 1 1/2 c water to a boil.
  • Step #2 Add rice & stir.
  • Step #3 Reduce heat, cover & let simmer for 20 mins.
  • Step #4 In another saucepan, 1 1/2 c milk, mix 1 1/2 c cooked rice, sugar & salt.
  • Step #5 Cook over med-heat/flame until thick & creamy, 15 to 20 mins.
  • Step #6 Stir in remaining 1/2 c milk, beaten egg & raisins.
  • Step #7 Cook 2 mins more, stirring constantly.
  • Step #8 Remove from heat, & stir in the butter & vanilla.
  • Step #9 Serve warm.
