Brazilian Prawn Vatapa Recipe

Ingredients
  • 2 crushed garlic cloves .
  • 1 2/3 c fish stock .
  • 2 1/4 c fresh white breadcrumbs .
  • 1 onion, sliced .
  • 4 1/2 oz dried shrimp .
  • 1 lime, juice of, fresh .
  • 2 fresh red chilies, no seeds, sliced .
  • 2 large tomatoes, sliced .
  • 3/4 c unsalted peanuts .
  • sliced fresh coriander (to garnish, cilantro) .
  • 1 oz gingerroot, sliced finely .
  • 1/2 c unsalted cashews .
  • 3 tbsps palm oil .
  • 500 g fresh prawns .
  • 4 tbsps coconut cream .
  • 7 tbsps coconut milk

Directions
  • Step #1 Put breadcrumbs in a bowl & stir in the the coconut milk & leave to soak for about 30 mins.
  • Step #2 Then puree in food processor/blender.
  • Step #3 Set aside.
  • Step #4 Peel fresh prawns & put shells with fish stock & tomatoes into pan bring to the boil & let simmer for 30 mins then strain.
  • Step #5 In a food processor/blender put the onion, dried shrimps & mix up until quite mushy, chilli, put thismix into a large fry pan with the palm oil & cook over a low heat.
  • Step #6 Grind the peanuts & cashews in the food processor/blender.
  • Step #7 Add this to the pan of onion mix.
  • Step #8 Stir in the breadcrumb puree & prawn stock & boil & stir for about 5 mins then add the coconut cream, lime joice, prawns & garnish with fresh coriander.
