Step #1 Put breadcrumbs in a bowl & stir in the the coconut milk & leave to soak for about 30 mins.
Step #2 Then puree in food processor/blender.
Step #3 Set aside.
Step #4 Peel fresh prawns & put shells with fish stock & tomatoes into pan bring to the boil & let simmer for 30 mins then strain.
Step #5 In a food processor/blender put the onion, dried shrimps & mix up until quite mushy, chilli, put thismix into a large fry pan with the palm oil & cook over a low heat.
Step #6 Grind the peanuts & cashews in the food processor/blender.
Step #7 Add this to the pan of onion mix.
Step #8 Stir in the breadcrumb puree & prawn stock & boil & stir for about 5 mins then add the coconut cream, lime joice, prawns & garnish with fresh coriander.
