Chicken Curry Recipe

Ingredients
  • 2 tsps curry powder .
  • 1 c canned sliced tomatoes .
  • 1 lb boneless skinless chicken breasts, cut into 1-inch cubes .
  • 1 (12-14 oz) can coconut milk, unsweetened .
  • 1/4 tsp salt .
  • 3 c fresh baby spinach, packed .
  • 1 1/2 tsps vegetable oil .
  • 2 tbsps tomato paste .
  • 1 medium onion, thinly sliced

Directions
  • Step #1 In a large skillet, heat oil over med-heat/flame.
  • Step #2 Add the onion & the salt.
  • Step #3 Cook until softened, about 7 mins, stirring often.
  • Step #4 Add the curry powder & cook, stirring constantly for 1 min.
  • Step #5 Stir in the coconut milk, tomatoes, & tomato paste & cook for 5 mins or until slightly thickened, stirring every once in awhile.
  • Step #6 Add the chicken, stir well & cook 5-6 mins or until the chicken is cooked through.
  • Step #7 Stir in the spinach & cook for 3 mins or until wilted, stirring every once in awhile.
  • Step #8 Spice up to taste with salt & serve over steamed rice.
