Chicken & Chorizo Pasta Recipe

Ingredients
  • 2 chicken breasts, cut into bite size pieces .
  • 1 1/2 c mushrooms, sliced (optional) .
  • 1 tbsp minced garlic .
  • salt & pepper .
  • 1 lb pasta (ziti or rotelle work well) .
  • 1/2 c peas (usually thrown in for the kids) (optional) .
  • 1 large bell pepper, sliced into bite size pieces .
  • 1 (12 oz) jar alfredo sauce .
  • 2 scallions, sliced (optional) .
  • 1/2 lb chorizo sausage, sliced into bite size pieces (can substitute with linguica) .
  • 1 small onion, sliced .
  • 1/4 c white wine

Directions
  • Step #1 Cook pasta till al dente according to manufacturers recommendation.
  • Step #2 In a large non stick pan, onion & garlic, cook chicken & chorizo with the salt, pepper, until cooked through.
  • Step #3 Add the remaining vegetables & wine & cook another 5 mins.
  • Step #4 Stir in alfredo sauce & heat through.
  • Step #5 Toss with pasta.
