Chocolate Brownie Cookies Recipe

Ingredients
  • 3/4 c semi-sweet chocolate chips (Ghirardelli recommended) .
  • 2 oz unsweetened chocolate (85%-100% cacao, Lindt or Ghirardelli recommended) .
  • 2 large eggs, room temperature .
  • 1/8 tsp salt .
  • 1 tsp vanilla extract .
  • 5 oz extra bittersweet chocolate (60% cacao, Lindt or Ghirardelli recommended) .
  • 1/4 c all-purpose flour .
  • 2/3 c sugar .
  • 1/2 tbsp ground espresso (optional) .
  • 1/4 tsp baking powder .
  • 2 tbsps unsalted butter or margarine

Directions
  • Step #1 Preheat oven to 325F degrees F.
  • Step #2 Whisk/mix together eggs, sugar, & vanilla at high speed until mixture increases to 3x volume with a ribbony consistency.
  • Step #3 Melt together both chocolates & butter in microwave or double boiler.
  • Step #4 Be careful not to scorch chocolate! If microwaving, do so in 15-20 second increments, stirring each time.
  • Step #5 Slowly add chocolate mixture to egg mixture while mixing, taking care not to add the chocolate so quickly that the eggs get "cooked.
  • Step #6 " Mix well.
  • Step #7 Add espresso (optional), flour, & salt, baking powder, continuing to mix well.
  • Step #8 Stir in the chocolate chips.
  • Step #9 Dollop onto a cookie sheet by the spoonful or using a pastry bag & cone, about 1 1/2 inches apart.
  • Step #10 Bake 8-10 mins at 325F degrees F.
