Beef Burgundy Crepe Recipe

Ingredients
  • 1/2 c onions, sliced (I did a fine chop) .
  • 1 lb stewing beef, cut into smaller cubes (because of Sweet Eddiebears swallowing problems I cut into very small pieces) .
  • 1 tbsp cornstarch .
  • 1 garlic clove .
  • 1/4 c fresh parsley, finely sliced .
  • 1 bay leaf .
  • 1 tbsp olive oil .
  • 1/4 c red wine .
  • 1/2 tsp black pepper .
  • 1 c mushrooms, sliced (I did a fine chop) .
  • 1/2 tsp onion powder

Directions
  • Step #1 Add beef cubes & brown on all sides.
  • Step #2 Pour 1 c of water over beef cubes, add bay leaf & let simmer, covered for 1 to 2 hrs over low heat/flame.
  • Step #3 Check every 20 mins & add water if needed.
  • Step #4 Never let the water boil away.
  • Step #5 Place onion , mushrooms,pepper & onion powder into the pot & cook about 5 to 10 mins until tender.
  • Step #6 Add wine & bring to a low boil for about 1 min.
  • Step #7 Dissolve cornstarch in 2 tbsps water & add to simmering beef to thicken meat juices.
  • Step #8 (Stir until thickened to avoid lumps).
  • Step #9 Remove pot from heat.
  • Step #10 Seperate beef cubes from the thickened beef juices.
  • Step #11 Place crepe onto a plate, browned side down.
  • Step #12 Spoon 1/2 c beef cube mixture onto crepe.
  • Step #13 Roll crepe & pour thickened sauce across the crepe.
  • Step #14 Sprinkle top with parsley, if desired.
