Scout's Salsa Chicken Recipe

Ingredients
  • 4 oz apricot jam .
  • 1 (1 1/4 oz) packet taco seasoning .
  • 3 lbs chicken pieces, bone in .
  • 1 c long grain white rice .
  • 12 oz pineapple-mango salsa

Directions
  • Step #1 Put chicken, jam, salsa, & seasoning in crockpot & cook on low for 5 hrs (my chicken was not completely thawed at this point).
  • Step #2 Put rice in crockpot & swirl & stir as best you can to mix the sauce & rice together around the chicken pieces (which should be almost falling apart at this point).
  • Step #3 Cook for 30 more mins.
  • Step #4 This amount of liquid made perfect rice.
  • Step #5 There was just enough liquid unabsorbed by the rice to make the dish moist.
  • Step #6 Note: next time I wll probably use the whole 8 oz.
  • Step #7 of jam called for in the original recipe, & will bag & freeze everything (except the rice) together raw.
