Potatoes Mashed With Caramelized Onions Recipe

Ingredients
  • 1 tbsp sherry wine vinegar .
  • potatoes .
  • salt & pepper .
  • salt .
  • ground pepper .
  • 3 lbs yukon gold potatoes, peeled & cut into even size pieces .
  • 1/4 c melted butter .
  • 2 tbsps butter .
  • 3/4 c buttermilk (or more) .
  • 1/2 c chicken broth .
  • 6 c sweet onions, sliced thin .
  • 1 tbsp olive oil .
  • 1/2 c grated asiago cheese .

  • 1 tbsp sugar

Directions
  • Step #1 Heat oil & butter In a large-ish skillet.
  • Step #2 Add onions & salt & saute until the onions begin to soften.
  • Step #3 Sprinkle top in the sugar, turn the heat to medium-low & continue to cook, stirring occassionally until the onions turn golden brown.
  • Step #4 Stir in the vinegar & stock & raise the heat to high.
  • Step #5 Reduce until the stock is almost gone.
  • Step #6 Spice up with salt & pepper.
  • Step #7 Remove from heat.
  • Step #8 While the onions are cooking, cook the potatoes in boiling salted water until tender.
  • Step #9 Drain well & let dry on the turned off burner.
  • Step #10 Mash the potatoes & beat in buttermilk & butter.
  • Step #11 Add more buttermilk if needed to make them creamy.
  • Step #12 Spice up with salt & pepper.
  • Step #13 Preheat the oven to 375'F.
  • Step #14 Butter a large gratin dish.
  • Step #15 Layer 1/3 of the potatoes then 1/2 the onions.
  • Step #16 repeat the layering ending with poataoes.
  • Step #17 Sprinkle top with Asiago & bake for 20-25 min until the top is browned & the potatoes are hot.
  • Step #18 Can be made ahead & heated when needed.
