Piroshky Recipe

Ingredients
  • 1 (3/8 oz) package dry yeast .
  • 2 tbsps sugar .
  • 1/4 c warm water .
  • 2 lbs ground beef .
  • 1/4 c oil or butter .
  • 1 tsp salt .
  • 1 egg .
  • 1 garlic clove, minced .
  • 1 medium onion, sliced .
  • 4 1/2 c flour .
  • Dough .
  • Filling .
  • pepper .
  • 1 1/2 c milk .
  • salt

Directions
  • Step #1 Dissolve yeast in water & let this stand 10 mins.
  • Step #2 In large bowl, mix flour, sugar & salt.
  • Step #3 Make a well in flour & add milk, egg, oil & yeast.
  • Step #4 Combine to make a soft dough.
  • Step #5 Knead about 10 mins.
  • Step #6 Let rise one half hr to one hr.
  • Step #7 Brown sliced onion & garlic.
  • Step #8 In separate pan, brown ground beef.
  • Step #9 Spice up with salt, pepper, garlic & onion.
  • Step #10 Cool meat mixture & remove solidified fat.
  • Step #11 Pinch a golf-ball sized piece of dough, flatten with fingers or roll out to 1/8” thickness.
  • Step #12 Place 2 Tbsp filling in center & bring opposite edges of circle together.
  • Step #13 Pinch securely.
  • Step #14 (The traditional shape is a plump center with tapering ends.
  • Step #15 ).
  • Step #16 Let piroshkis rise seam side down, 30 mins.
  • Step #17 Heat oven to 350.
  • Step #18 Brush with egg & bake this until golden brown (approx 20 min, it depends on the size).
  • Step #19 The piroshky may also be deep fried.
  • Step #20 Ed.
  • Step #21 Note: I also like to add about 1 c cheese sauce powder (sometimes found in bulk food stores) to the meat mix.
  • Step #22 I find it gives a slightly cheesy taste.
  • Step #23 If I do that, I omit the salt.
