Vegetable Sesame Rice Balls Recipe

Ingredients
  • 1/2 lemon, juice of .
  • 3 c short-grain brown rice, cooked & cold .
  • 2 tbsps tahini .
  • 1 c sesame seeds .
  • For the dipping sauce .
  • 2 tbsps mirin .
  • 1 tbsp tamari .
  • 2 tbsps tamari .
  • 1 c mixed raw vegetables, of your choice .
  • 1/2 c silken tofu

Directions
  • Step #1 Preheat the oven to 180 degrees Celsius.
  • Step #2 Chop the vegetables very finely - if the pieces are too big, the mixture will not stick together.
  • Step #3 Combine the rice & vegetables in a bowl.
  • Step #4 Mix the tahini, lemon juice, tamari & tofu in a mixer until smooth & creamy.
  • Step #5 Pour this sauce over the rice & vegetables & mix thoroughly.
  • Step #6 With wet hands, roll bits of the rice mixture into balls of about 5cm in diameter.
  • Step #7 Roll the balls in the sesame seeds until they are completely coated & place them on a baking tray.
  • Step #8 Bake for 40 mins, turning the balls twice during the baking process.
  • Step #9 While the balls are cooking, make the dipping sauce by mixing the tamari & mirin together in a small bowl.
