Asparagus With No-cook Creamy Mustard Sauce Recipe

Ingredients
  • black pepper .
  • 1 1/2 lbs asparagus spears, rinsed & trimmed .
  • 1/2 c plain nonfat yogurt .
  • 1/2 tsp salt .
  • 2 tbsps light mayonnaise .
  • 2 c water .
  • 1 tbsp Dijon mustard .
  • 2 tsps lemon juice

Directions
  • Step #1 For sauce, mix in a bowl yogurt, mayonnaise, mustard, lemon juice & salt.
  • Step #2 Whisk until smooth & set aside.
  • Step #3 Bring water to a boil in a 12-inch skillet over high heat.
  • Step #4 Add asparagus, reduce heat, return to a boil, cover tightly & let simmer 3 mins or until just tender crisp.
  • Step #5 Remove from water & drain on paper towels.
  • Step #6 Place asparagus on serving platter & spoon sauce over all.
  • Step #7 Sprinkle top with black pepper.
