Yellow Squash And Stuffing Casserole Recipe

Ingredients
  • 2 lbs yellow squash, sliced .
  • 1 c sour cream .
  • 2 c shredded cheddar cheese .
  • 1/2 tsp salt .
  • 2 tbsps butter or margarine .
  • 1/2 c onions, sliced .
  • 1 (10 3/4 oz) can cream of mushroom soup .
  • 1/8 tsp pepper .
  • 2 1/4 c dry Pepperidge Farm Herb Stuffing .
  • 1/2 c butter, melted

Directions
  • Step #1 Cook squash & onion together in the two tbsps of butter until the vegetables are soft.
  • Step #2 Drain well.
  • Step #3 Mix in soup, sour cream, salt & pepper.
  • Step #4 Combine half of herb stuffing & the 2 c of cheese with the squash mixture & spread into a greased casserole.
  • Step #5 Mix remaining herb stuffing with the stick of melted butter & scatter over the top of the casserole.
  • Step #6 Bake in a 350-degree oven for 30 mins, until golden brown.
