Ingredients
1/4 c sugar .
3 tsps fresh yeast .
4 c plain flour .
2 oz melted butter .
1 1/2 c milk, warmed to tepid (105F) .
1 beaten egg .
2 c quality coconut milk, at about room temp
Directions
Step #1 Heat oven to 350°F.
Step #2 Dissolve 1 tsp of the sugar & the yeast in the warmed milk.
Step #3 Sieve the flour into a large bowl or Kitchen Aid bowl & stir in the the sugar.
Step #4 Make a well in the centre & add the beaten egg, melted butter & the milk/yeast mixture.
Step #5 Mix the ingredients to form a dough that no longer sticks to the bowl.
Step #6 Knead by hand on a lightly floured board, or using the dough attachment on the Kitchen Aid, until the dough is smooth & shiny.
Step #7 Place the dough in a lightly oiled bowl & cover with plastic film.
Step #8 Leave in a warm place for an hr until the dough has doubled in size.
Step #9 Return the dough to the floured board & punch down using your fists.
Step #10 Divide the dough into 32 equal pieces & roll each into a ball shape.
Step #11 Oil a 10" round cake tin with sides at least 2" high.
Step #12 Pack the dough balls into the tin & leave in a warm place for a second rising.
Step #13 Again, the dough should double in size.
Step #14 Pour the coconut milk over the buns until it reaches the top of the buns.
Step #15 Bake in the preheated oven for about 35 mins until golden brown & cooked through.
Step #16 Best served warm.
