Creamy Vegetable Pot Pie Recipe

Ingredients
  • 1/2 c cooked carrots .
  • 1 c cooked broccoli .
  • 1 c frozen soybeans .
  • 1 c butter .
  • 1/2 c sliced onions .
  • 1 c cooked potatoes .
  • 2 vegetarian vegetable bouillon cubes .
  • Pastry .
  • Filling .
  • 2 c cooked white pearl onions .
  • 1 c sliced celery .
  • 1/4 c flour .
  • 3 c milk .
  • 1/2 tsp pepper .
  • 1/2 c butter .
  • 5-6 tbsps cold water .
  • 1 tsp thyme leaves .
  • 2 1/4 c flour

Directions
  • Step #1 Make the dough:.
  • Step #2 Crumble salt, flour, & butter.
  • Step #3 Add water one tbsp at a time.
  • Step #4 Stir lightly until dough clings in a ball.
  • Step #5 Roll with rolling pin to make dough for 2 pies.
  • Step #6 Cook the Vegetables: Ahead of time, boil the pearl onions, carrots, potatoes, & broccoli until they are not quite fully cooked.
  • Step #7 Make the filling:.
  • Step #8 Sauté celery & sliced onions with butter.
  • Step #9 Add flour to make a paste.
  • Step #10 Add milk & boullion.
  • Step #11 Cook until thickened.
  • Step #12 Add cooked vegetables, frozen vegetables, & spices.
  • Step #13 Put the filling in the pie crusts & put the tops on the pies.
  • Step #14 Bake 20-25 min at 375 degrees.
