Chicken Kiev Recipe

Ingredients
  • 1/2 tbsp sliced fresh chives
  • 3 tbsps water
  • 1 tbsp lemon juice
  • 2 quarts vegetable oil for frying
  • 1/2 c butter
  • 6 skinless, boneless chicken breast halves
  • 3 eggs, lightly beaten
  • salt & pepper to taste
  • 2 c dried bread crumbs
  • 1/2 tbsp sliced fresh parsley

Directions
  • Step #1 In a small bowl, mix the butter/margarine, parsley, chives & lemon juice.
  • Step #2 Blend all together & put in the fridge.
  • Step #3 Place chicken breasts between 2 pieces of wax paper & lb well to flatten.
  • Step #4 Remove paper & season breasts with salt & pepper to taste.
  • Step #5 Remove seasoned butter from refrigerator & divide it into 6 portions.
  • Step #6 Place one portion in the center of each chicken breast.
  • Step #7 Fold the short ends of the breasts into the center, then fold in the sides.
  • Step #8 Secure each breast with a wooden toothpick.
  • Step #9 Add the water to the eggs & beat together.
  • Step #10 Coat each rolled breast with bread crumbs, dip into egg/water mixture, then into bread crumbs again, coating well.
  • Step #11 Chill breasts for one hr.
  • Step #12 In a deep fryer, heat oil to 365 degrees F (185 degrees C).
  • Step #13 Carefully lower breasts into hot oil.
  • Step #14 Fry for 8 mins or until golden brown.
  • Step #15 Drain on paper toweling & serve.
