Duck In Spicy Orange Sauce Recipe

Ingredients
  • 2 stalks lemongrass, cut into 3 then crushed .
  • marinade .
  • 15 g gingerroot, peeled & minced .
  • salt & pepper .
  • 15 g nuoc cham sauce .
  • 2 tbsps vegetable oil .
  • 1 lime, juice of .
  • 2 small red chili peppers, seeded & sliced .
  • 3 tbsps sugar .
  • 1/4 red chili pepper, seeded & sliced .
  • 2 kg duck, cut into serving pieces .
  • 2 oranges, juice of, fresh .
  • 500 ml orange juice .
  • 1 orange rind, cut into julienne strips .
  • 1 tsp five-spice powder .
  • 15 g gingerroot, minced

Directions
  • Step #1 Mix marinade ingredients with half of the oil.
  • Step #2 Coat both sides of duck pieces & marinade the longer the better preferably overnight.
  • Step #3 Put some oil in a heavy oven proof pan & place marinated duck pieces in it & cook till golden.
  • Step #4 Sprinkle top the sugar over the duck cook for 10 mins more then turn again & sprinkle with rest of the sugar; Cook further 10 mins.
  • Step #5 Take out & drain.
  • Step #6 In the fat fry off the garlic ginger & lemon grass & chilies.
  • Step #7 When this is cooked stir in the the lime juice, julienne orange peel, orange juice & the nuoc cham sauce.
  • Step #8 Put back the duck then place this in a heavy oven dish & cook this until duck is ready 1 - 2 hrs in a moderate oven.
