Ingredients
  • 2 1/2 c low-fat milk .
  • 2 1/4 c grated extra-sharp cheddar cheese, divided .
  • 2 tbsps unsalted butter, plus more for brushing pan .
  • 2 tbsps unbleached white flour .
  • 10 oz medium elbow macaroni

Directions
  • Step #1 prehat oven to 400F.
  • Step #2 cook macaroni according to package directions until al dente.
  • Step #3 drain.
  • Step #4 melt 2 tbs.
  • Step #5 butter in sauce pan over med-heat/flame.
  • Step #6 stir in the flour, & cook 1 min, add milk, cook 6 mins or until thickened, stirring constantly.
  • Step #7 remove this from heat; stir in the 1 1/2 c cheeses.
  • Step #8 season this with salt & pepper.
  • Step #9 pour over noodles & mix.
  • Step #10 transfer to a 9 x 13- inch baking dish.
  • Step #11 sprinkle with remaning 3/4 c cheese.
  • Step #12 bake 45 mins or until top is crisp & beginning to brown.
  • Step #13 let this stand 10 mins before serving.
