Quick And Easy Creamy Asparagus Potato Soup Recipe

Ingredients
  • 1 (14 oz) can fat free chicken broth .
  • 1 (14 1/2 oz) can new potatoes, drained .
  • 1/2 tsp dried thyme, crushed .
  • 1 c low-fat milk or half-and-half .
  • 1 (15 oz) can asparagus spears, drained .
  • 1/8 tsp garlic powder

Directions
  • Step #1 Place asparagus, potatoes, thyme & garlic powder in food processor/blender or mixer (in batches if needed); process until smooth.
  • Step #2 Pour into medium saucepan, add broth.
  • Step #3 Bring to a boil.
  • Step #4 Stir in milk; heat through.
  • Step #5 (do not boil).
  • Step #6 Spice up with salt & pepper to taste, if desired.
  • Step #7 Serve hot or cold.
  • Step #8 Thin with extra milk or water, if desired.
