Bacon Grilled Cajun Trout Recipe

Ingredients
  • 1 (16 oz) bottle cajun marinade (recommended ( A-1 Steakhunter) .
  • 4 (1 lb) whole trout, cleaned with heads & tails removed .
  • butcher kitchen twine, 12 pieces, 6 to 8 inches long .
  • 1/4 tsp liquid smoke (recommended ( Wright's) .
  • 1 tbsp cajun seasoning .
  • 1 (14 1/2 oz) can sliced tomatoes with green pepper celery & onion .
  • 8 slices thick-cut bacon .
  • 1/4 c real crumbled cooked bacon

Directions
  • Step #1 Set up grill for direct cooking over med-heat/flame.
  • Step #2 Oil grate when ready to start cooking.
  • Step #3 Place trout in large zip-top bag & cover with marinade; reserve 1/4 c of marinade for sauce.
  • Step #4 Marinate for 30 mins.
  • Step #5 In a small saucepan, tomatoes, mix reserved marinade, liquid smoke, Cajun seasoning, & crumbled bacon.
  • Step #6 Bring to a boil.
  • Step #7 Reduce heat & let simmer for 5 mins; set aside.
  • Step #8 Lay 3 pieces of butcher twine horizontally on a sheet pan, evenly spaced.
  • Step #9 Lay 1 slice of bacon vertically on top of butcher twine.
  • Step #10 Place 1 fish on top of bacon slice.
  • Step #11 Top fish with another slice of bacon.
  • Step #12 Tie each piece of twine so that you have 3 knots securely holding the fish in place.
  • Step #13 Repeat process with all remaining fish.
  • Step #14 Place whole fish on grill.
  • Step #15 Cook for a total of 15 to 18 mins, turning every 3 to 4 mins.
  • Step #16 Watch for flare-ups from bacon slices.
  • Step #17 Remove from grill.
  • Step #18 Untie twine from fish.
  • Step #19 Top with Cajun tomato sauce & serve warm.
  • Step #20 INDOOR: Prepare & marinate trout as directed.
  • Step #21 Preheat oven to 450 degrees F.
  • Step #22 Place prepared trout on foil wrap lined baking sheet.
  • Step #23 Roast fish for 30 mins.
  • Step #24 Serve as directed.
