Apricot Veal Rolls On Mushroom Rice Recipe

Ingredients
  • 2 tsps worcestershire sauce .
  • 4 c cooked rice .
  • 1 (32 g) packet onion soup mix .
  • 2 slices bacon, sliced .
  • 150 g mushrooms, sliced .
  • 8 slices veal schnitzels, lbed .
  • 2 tbsps oil .
  • 1 tbsp oil, extra .
  • 1 onion, sliced .
  • seasoned flour, for dusting .
  • 470 g apricot nectar

Directions
  • Step #1 Preheat oven to 180°C.
  • Step #2 Saute bacon & onion in a medium pan until onion is tender.
  • Step #3 Spoon a little onto each piece of veal.
  • Step #4 Roll up & secure with a toothpick.
  • Step #5 Dust in flour, shaking off excess.
  • Step #6 Brown all over in hot oil.
  • Step #7 Transfer to an ovenproof dish.
  • Step #8 Combine nectar, soup mix & sauce & pour over rolls.
  • Step #9 Bake, uncovered for 1 hr or until cooked.
  • Step #10 Saute mushrooms in oil until tender.
  • Step #11 Add cooked rice & serve this with rolls.
