Smoked Salmon Potato Cakes With Garlic Cream Recipe

Ingredients
  • 150 g fresh breadcrumbs, toasted .
  • 300F g smoked salmon, finely sliced .
  • 2 large egg yolks .
  • garlic cream .
  • 6 tbsps olive oil .
  • 1 tbsp parsley, finely sliced .
  • 1 lb potatoes, peeled .
  • 1 large bulb of garlic, roasted .
  • 1 large egg, lightly beated .
  • 4 green onions, finely sliced .
  • 2 tsps fresh dill, finely sliced .
  • 1 large lemon, juice of .
  • 50 g sesame seeds .
  • 150 ml olive oil

Directions
  • Step #1 To make the garlic cream squeeze the garlic out of each clove into a food processor/blender.
  • Step #2 add the eggs & lemon juice.
  • Step #3 add the olive oil slowly in a thin stream with the motor running until the mixture thickens.
  • Step #4 season to taste with slat & pepper, add dill & refridgerate until needed.
  • Step #5 cook potatoes in boiling water until almost done, cool & then grate them into a large bowl.
  • Step #6 mix the salmon, egg & onions into the potato, parsley, season this with salt & pepper.
  • Step #7 shape into 12 small cakes, mix the breadcrumbs with the sesame seeds & coat the cakes evenly with them.
  • Step #8 saute the cakes on medium heat in a little oil until browned & cooked through, about 5 mins each side.
  • Step #9 Serve hot with garlic cream.
