Ingredients
fresh ground black pepper .
1 inch fresh gingerroot, peeled & sliced .
1/2 c soy sauce .
1 lime, juice of .
2 garlic cloves, sliced .
kosher salt .
1/4 c peanut oil .
4 boneless chicken breasts (with skin)
Directions
Step #1 Put the chicken breasts In a large-ish plastic freezer bag.
Step #2 Add the soy sauce, ginger, peanut oil, lime juice, & garlic.
Step #3 Seal the bag & shake it well to mix the ingredients.
Step #4 Marinate for at least 1 hr, preferably overnight.
Step #5 You can put the bag in the freezer where it will keep for up to 6 months.
Step #6 When you are ready to cook the chicken, remove it from the freezer & thaw it overnight in the refrigerator.
Step #7 Heat a well-seasoned cast iron pan, a non stick skillet, or a grill pan over medium high heat.
Step #8 Remove the chicken from the marinade & shake off any excess; season this with salt & pepper.
Step #9 Cook the chicken breast until done, about 4 to 5 mins per side.
