Whole Wheat Super Healthy Orange Muffins Recipe

Ingredients
  • 2 c whole wheat flour .
  • 1 1/4 c shredded carrots .
  • 1 1/2 c 2% low-fat milk .
  • 1/2 c applesauce .
  • 1/2 c brown sugar .
  • 1 tbsp vanilla extract .
  • 1/4 c Splenda sugar substitute .
  • 1 c mashed cooked sweet potatoes .
  • 1/3 c low fat cottage cheese .
  • 1/2 c sugar .
  • 3/4 c flour .
  • 2 egg whites

Directions
  • Step #1 Preheat oven to 400º.
  • Step #2 Combine first 5 ingredients In a large-ish bowl.
  • Step #3 Stir in carrot.
  • Step #4 Combine milk & next 5 ingredients into another bowl & stir well.
  • Step #5 Add to flour mixture, stirring just until moist.
  • Step #6 Spoon batter into 18 muffin c coated with cooking spray.
  • Step #7 Bake at 400º for 20 mins or until done.
  • Step #8 Remove from pans as soon as possible, & cool on a wire rack.
