Awesome Chicken Nachos Recipe

Ingredients
  • 1/2 tsp salt .
  • 2 c chicken stock .
  • 2 lbs boneless skinless chicken breasts, sliced into 3-inch strips .
  • 1/4 tsp cayenne pepper .
  • 1/2 c sliced pickled jalapeno peppers, for garnishing .
  • 2 c milk .
  • 1 tsp salt .
  • 2 c grated sharp cheddar cheese .
  • 2 c thinly sliced onions .
  • 4 tbsps unsalted butter .
  • 2 c shredded monterey jack cheese .
  • 4 tbsps all-purpose flour .
  • 3/4 c sour cream, for garnishing .
  • 4 tsps chili powder .
  • 8-10 c corn tortillas .
  • 1/4 c green onions, finely sliced .
  • 3 tbsps olive oil .
  • Ingredients .
  • 1 tbsp minced garlic .
  • 4 tsps fresh squeezed lime juice .
  • 2 tbsps sliced fresh cilantro leaves, for garnishing .
  • 1 (4 oz) can sliced green chilies, drained .
  • For the Nachos (use 4 c shredded cooked chicken) .
  • pico de gallo, for serving, recipe follows

Directions
  • Step #1 For Chicken:.
  • Step #2 Set a wide-mouthed 3-quart saucepan with lid over medium-high heat & add the oil to the pan.
  • Step #3 Spice up the chicken pieces with the chili powder & salt & toss the evenly coat.
  • Step #4 Add the chicken to the pan & sear for 3 mins per side.
  • Step #5 Add the onions to the pan & saute for another 3 mins.
  • Step #6 Add the garlic to the pan & saute for 1 min.
  • Step #7 Pour the chicken stock over the chicken & bring to a boil.
  • Step #8 Reduce to a low heat & cover.
  • Step #9 Continue to cook the chicken until very tender, about 1 hr, stir the chicken to shred it & continue to cook, covered, for another 30 mins.
  • Step #10 Once the chicken is cooked, stir & mash to shred the chicken meat & add the lime juice to the chicken.
  • Step #11 Set aside as you prepare the nachos.
  • Step #12 For Nachos:.
  • Step #13 In a medium saucepan, melt the butter over medium-high heat & whisk in the flour.
  • Step #14 Cook, stirring constantly, for 2 to 3 mins.
  • Step #15 Do not allow the flour to color.
  • Step #16 While whisking constantly, add the milk in a steady stream.
  • Step #17 Add the green chiles & bring the sauce to a boil.
  • Step #18 Cook, stirring frequently, for about 5 mins, or until the sauce is thickened & bubbly.
  • Step #19 Add the Cheddar, salt, & cayenne pepper & stir until the cheese is melted & the sauce is smooth.
  • Step #20 Cover up & remove this from the heat.
  • Step #21 Preheat the oven to 400F degrees F.
  • Step #22 In a large, ovenproof shallow casserole or on a large baking sheet, spread half of the tortilla chips in an even layer.
  • Step #23 Top with half of the chicken, & half of the Monterey Jack cheese.
  • Step #24 Top with the remaining tortilla chips & chicken.
  • Step #25 Pour the hot cheese sauce over the chicken, then evenly spread the remaining grated Monterey Jack over the top.
  • Step #26 Bake until the cheese is melted & bubbly & the nachos are heated through, 8 to 10 mins.
  • Step #27 Garnish with the sliced green onions, sour cream, pickled jalapenos & cilantro.
  • Step #28 Serve with some pico de gallo or your favorite fresh salsa.
