Curried Chicken Nachos Recipe

Ingredients
  • pico de gallo or picante sauce .
  • 1/4 tsp garlic powder, crushed & sliced or 2 fresh garlic cloves, crushed & sliced .
  • corn tortilla chips .
  • banana peppers, sliced .
  • fresh black pepper .
  • curry powder (enough to coat nuggets) .
  • 1 tbsp water .
  • Remaining ingredients .
  • 2-3 boneless skinless chicken breast halves .
  • Marinade .
  • 1 roma tomato, sliced .
  • 1 scallion, sliced .
  • 1 c mozzarella cheese, shredded .
  • 1 tbsp extra-virgin olive oil .
  • 1-2 pinch of your favorite artificial sweetener .
  • 1 tsp salt .
  • 1/4 c white vinegar

Directions
  • Step #1 You can marinate the chicken right out of the freezer for up to a couple of days, but you can marinate unfrozen ones overnight too.
  • Step #2 When the marinade has “cooked” the chicken a bit, drain & cut into large bite size nuggets.
  • Step #3 Preheat the oven to 350°F Roll the nuggets in enough curry powder to coat them thoroughly.
  • Step #4 Bake for about 20 mins or until tender.
  • Step #5 Layer the chips on a plate or pan, depending if you’re microwaving or baking.
  • Step #6 Next, evenly layer the green onions, tomatoes, peppers & mozzarella cheese.
  • Step #7 Microwave or bake this until the cheese melts.
  • Step #8 Top with pico de gallo or picante sauce.
