The Ultimate Flourless Chocolate Cake Recipe

Ingredients
  • 1 1/2 c heavy cream .
  • 3/4 lb frozen unsweetened raspberries .
  • 1 tbsp vanilla extract .
  • 1 tsp granulated sugar .
  • 1 1/2 tsps vanilla extract .
  • 1/2 c granulated sugar .
  • 1 tbsp Chambord raspberry liquor (optional) or other raspberry liqueur (optional) .
  • 6 large eggs, room temperature .
  • 2 oz bittersweet chocolate, coarsely sliced .
  • 1 1/2 tsps instant coffee granules .
  • 10 oz semisweet chocolate, coarsely sliced .
  • 1 1/2 c granulated sugar .
  • 1 tbsp granulated sugar, plus .
  • 1/4 lb fresh raspberries (optional) .
  • 3/4 lb unsalted butter, softened .
  • 3/4 c boiling water

Directions
  • Step #1 Position a rack in the center of the oven & preheat to temperature to 350 degrees F.
  • Step #2 Butter the bottom & sides of a deep 9 inch round springform pan.
  • Step #3 Line the bottom of the pan with a round of parchment paper & butter the paper.
  • Step #4 In a food processor/blender fitted with the metal blade, sugar, process the chocolates, & coffee 15-20 seconds until finely ground.
  • Step #5 With the motor of the food processor/blender running, pour the boiling water through the feed tube.
  • Step #6 Process 10-15 seconds, until the chocolate is completely melted.
  • Step #7 Scrape down sides of bowl with spatula.
  • Step #8 Add butter & eggs & vanilla & then process about 5 seconds until the mixture is smooth & creamy.
  • Step #9 Scrape chocolate batter into prepared pan & smooth top.
  • Step #10 Bake 55-60 mins until edges are puffy & center is just set.
  • Step #11 Cool on wire rack for 30 mins.
  • Step #12 Cover up & put in the fridge for at least 3 hrs.
  • Step #13 Make raspberry sauce with frozen raspberries & sugar in a saucepan over med-heat/flame.
  • Step #14 Cook until sugar is dissolved & berries are just soft.
  • Step #15 {Don't boil} Strain mixture & stir in the raspberry liqueur.
  • Step #16 Remove cake from pan by running a thin knife blade around cake to loosen from pan.
  • Step #17 Invert cake onto a plate & peal off paper.
  • Step #18 Refrigerate cake while preparing whipped cream.
  • Step #19 Whip cream with sugar & vanilla to stiff peaks.
  • Step #20 To serve drizzle some raspberry coulis on each plate; cut thin slice of cake & place on plate.
  • Step #21 Garnish slices of cake with a dollop of whipped cream & fresh raspberries.
