Mexican Chicken And Rice Recipe

Ingredients
  • 2 1/2 tbsps dried ancho chile powder .
  • 4 garlic cloves, minced .
  • 1 1/2 lbs boneless skinless chicken breasts .
  • 1/3 c green onions, sliced .
  • 1 (19 oz) can black beans, drained & rinsed .
  • 2 c chicken stock .
  • salt .
  • 1 white onion, sliced .
  • 2 tbsps olive oil .
  • 1 c long-grain white rice

Directions
  • Step #1 Heat the oil In a large-ish saucepan over medium- high heat.
  • Step #2 Sprinkle top both sides of the chicken with salt & 1 tbsps chili powder.
  • Step #3 Lay in the hot oil in a single layer.
  • Step #4 Cook until browned, 2 to 3 mins, then flip over & cook the other side for the same length of time.
  • Step #5 Remove to a plate, leaving behind as much oil as possible.
  • Step #6 When cool enough to handle, cut into 1-inch cubes.
  • Step #7 Add the onion & rice to the pot.
  • Step #8 Cook, stirring, 2 mins, until the rice is opaque.
  • Step #9 Add the garlic & remaining chili powder.
  • Step #10 Cook, stirring, 1 min.
  • Step #11 Add the broth & bring to a boil, stirring.
  • Step #12 Reduce the heat to medium-low & cover.
  • Step #13 Cook for 10 mins.
  • Step #14 Add the chicken & beans & cook, covered, for 12 mins.
  • Step #15 Uncover & sprinkle on the green onions.
  • Step #16 Test the rice to see if it is done.
  • Step #17 If not, cook for another 5 mins.
  • Step #18 Let stand for 5 to 10 mins to finish steaming the rice.
  • Step #19 Fluff the rice mixture with a fork.
  • Step #20 Serve with salsa or hot sauce.
