Blackberry Jam Cake With Creme Fraiche Recipe

Ingredients
  • 1 c unsalted butter, softened .
  • 1 1/2 tsps ground cinnamon .
  • 1/2 c whipping cream .
  • 2 c fresh blackberries .
  • 1/4 c powdered sugar .
  • 1 tsp ground ginger .
  • 1 tsp vanilla extract .
  • 3 c all-purpose flour .
  • 4 large eggs .
  • Creme Fraiche .
  • 1 c blackberry jam .
  • 1 (8 oz) container sour cream .
  • 1 tsp ground nutmeg .
  • 1 tsp baking soda .
  • 1 c buttermilk .
  • 1 1/4 c sugar

Directions
  • Step #1 Beat butter & sugar at medium speed with an electric mixer until fluffy.
  • Step #2 Add eggs, 1 at a time, beating until mixed after each addition.
  • Step #3 Stir in vanilla.
  • Step #4 Combine flour & next 4 ingredients; add to butter mixture alternately with buttermilk, beginning & ending with flour mixture.
  • Step #5 Beat at slowish speed until mixed after each addition.
  • Step #6 Fold in jam.
  • Step #7 (Do not overmix.
  • Step #8 ) Pour batter into a greased 10-inch bundt pan.
  • Step #9 Bake at 350 for 45 mins to 1 hr or until wooden pick comes out clean.
  • Step #10 Cool in pan on wire rack 20 mins; remove this from pan & cool completely on wire rack.
  • Step #11 Sprinkle top with some powdered sugar if desired.
  • Step #12 Serve with blackberries & Creme Fraiche.
  • Step #13 For Creme Fraiche, stir this together all ingredients; cover & chill 8 hrs.
