Beef Curry With Apples And Raisins Recipe

Ingredients
  • 1 tsp Splenda sugar substitute .
  • 2 tbsps oil .
  • 3 whole cloves .
  • 3 tbsps flour .
  • 2 tsps salt .
  • 12 oz beef stock .
  • 1 large onion, thinly sliced .
  • 3 large apples, roughly sliced .
  • 1 c raisins .
  • 2 c couscous, cooked .
  • 1/2 tsp pepper .
  • 1 bay leaf .
  • 2 lbs boneless beef sirloin, cubed .
  • 1 garlic clove, crushed with the back of a knife .
  • 2 potatoes, sliced (peeled if desired) .
  • 1 1/2 tsps curry powder

Directions
  • Step #1 Combine flour, salt, & pepper in a Ziploc bag.
  • Step #2 Add meat & shake until evenly coated.
  • Step #3 Heat oil in a skillet & brown meat in batches until caramelized.
  • Step #4 Remove from skillet & drain excess oil as needed.
  • Step #5 Sauté onion with a splash of beef stock until softened.
  • Step #6 Add bay leaf, cloves, curry powder, Splenda, & remaining stock.
  • Step #7 Bring to a simmer.
  • Step #8 Add meat & any accumulated juices.
  • Step #9 Cook, covered, over medium-low heat for an hr.
  • Step #10 Add fruit & potatoes to the pan & cook, covered, for another 45 mins.
  • Step #11 Discard bay leaf, cloves, & garlic.
  • Step #12 Serve over the cooked couscous.
  • Step #13 (It's also good over rice).
