Mushroom Barley Soup Recipe

Ingredients
  • 4 c chicken broth or vegetable broth .
  • 2 c mushrooms, fresh & sliced .
  • 1 medium onion, sliced .
  • 1 pinch thyme .
  • 1/4 c pearl barley .
  • 1 bay leaf .
  • 4 c water .
  • black pepper, to taste .
  • 1/2 tsp oil

Directions
  • Step #1 Heat dutch oven or large pan over medium-high heat.
  • Step #2 Add mushrooms & onions, cook this until gold, about 3 mins.
  • Step #3 Add all other ingredients & bring to a boil.
  • Step #4 Reduce heat to low, & let simmer until the barley is tender, about 1-1/2 hrs.
