Chicken Tostadas Recipe

Ingredients
  • 1 c sliced onion
  • 1 (15 oz) can black beans, rinsed & drained
  • 3/4 lb skinless, boneless chicken breast halves - cut into strips
  • Sour cream
  • 2 c torn romaine
  • 6 (8 inch) (8 inch) flour tortillas
  • 1 1/2 c shredded Cheddar cheese
  • 1/2 c salsa
  • 2 c finely sliced tomatoes, drained
  • 2 tsps chili powder, divided
  • 1 tsp ground cumin, divided

Directions
  • Step #1 Spritz both sides with nonstick cooking spray.
  • Step #2 Place on ungreased baking sheets.
  • Step #3 Bake at 350 degrees F for 7 mins; turn & bake 3 mins longer or until crisp.
  • Step #4 Set aside.
  • Step #5 In a food processor/blender, process the beans until smooth.
  • Step #6 In a saucepan, 1 tsp chili powder, mix the beans, 1/2 tsp cumin & salsa; bring to a boil.
  • Step #7 Remove from the heat; set aside.
  • Step #8 Sprinkle top chicken with remaining chili powder & cumin.
  • Step #9 In a skillet coated with nonstick cooking spray, cook chicken over med-heat/flame for 5 mins or until juices run clear, stirring constantly.
  • Step #10 Spread bean mixture over tortillas to within 1/2 in.
  • Step #11 of edges of tortillas.
  • Step #12 Top with the chicken, tomatoes, onion & cheese.
  • Step #13 Bake at 350 degrees F for 2 mins or until cheese is melted.
  • Step #14 Top with romaine.
  • Step #15 Garnish with sour cream if desired.
