Shrimp And Snapper Stew Southwest Style Recipe

Ingredients
  • 1/2 tsp oregano .
  • 1 c carrots, thinly sliced .
  • 1/2 c long grain rice, uncooked .
  • 1 (12 oz) can beer .
  • 1 tbsp cumin .
  • 2 (14 1/2 oz) cans stewed tomatoes .
  • 2 garlic cloves, minced .
  • 1 onion, medium sliced .
  • 1 (14 1/2 oz) can chicken broth .
  • 8 oz large shrimp, peeled & deveined .
  • 1 green pepper, sliced .
  • 1 tbsp chili powder .
  • 8 oz red snapper fillets

Directions
  • Step #1 In a very large saucepan mix tomatoes, undrained, broth & beer.
  • Step #2 Bring to a boil.
  • Step #3 Add carrots, onion, rice & spices.
  • Step #4 Return to boil.
  • Step #5 Reduce heat, cover & let simmer until carrots & rice are almost tender.
  • Step #6 Add snapper, shrimp & green pepper & return to a boil.
  • Step #7 Reduce heat, cover & let simmer 3-5 mins until snapper flakes & shrimp is pink.
