Sweet Stuffed Cannelloni Recipe

Ingredients
  • 1/2 c brown sugar .
  • 1/4 tsp ground cinnamon .
  • 1 c pouring cream .
  • 1/4 c pine nuts, lightly toasted .
  • 1 candied clementine, finely sliced .
  • 1/4 c finely sliced fresh mint .
  • 2 tsps caster sugar .
  • 1 lemon, zest of .
  • 1/4 tsp freshly grated nutmeg .
  • 350 g fresh ricotta .
  • butter, for greasing .
  • 2 egg whites, lightly beaten .
  • 6 cannelloni tubes

Directions
  • Step #1 Combine ricotta, mint, pine-nuts, cinnamon, brown sugar, lemon zest, nutmeg, candied clementine & egg white.
  • Step #2 Carefully stuff cannelloni with filling & place this in a buttered baking dish.
  • Step #3 Cover up with pouring cream & sprinkle with caster sugar.
  • Step #4 Bake in a 190C oven for 25 mins or until golden brown.
  • Step #5 Suggestions:.
  • Step #6 Serve one cannellone on a plate with fresh berries or a tbsp of hot chocolate sauce, made by melting equal amounts of cream & chocolate over a low heat with a tsp of vanilla & a cinnamon stick.
