Flank Steak W. Red Wine Vinegar And Greens Recipe

Ingredients
  • 5 oz mixed salad greens (1/2 bag) .
  • 2 tbsps red wine vinegar .
  • kosher salt & freshly ground black pepper .
  • 1 tbsp unsalted butter .
  • 1 tbsp sliced fresh oregano leaves or 1 tsp dried oregano .
  • 1 tbsp extra-virgin olive oil .
  • 1 garlic clove, minced .
  • 1 lb flank steaks, divided in half if it's all one piece

Directions
  • Step #1 Heat the olive oil in a medium skillet over med-heat/flame.
  • Step #2 Spice up both sides of the steaks with salt & pepper to taste.
  • Step #3 When the oil is hot & shimmering, add the steaks & cook, until seared & rich mahogany, tuning each once, about 6 mins per side.
  • Step #4 Transfer the steaks to a plate.
  • Step #5 Add the garlic to the pan & cook, until aromatic, stirring every once in awhile, about 1 min.
  • Step #6 Pull the skillet from the heat, add the vinegar, & use a wooden spoon to scrape up any browned bits that cling to the pan.
  • Step #7 Stir in the oregano, butter, & any juices from the steak, until the butter melts.
  • Step #8 Add the greens to the skillet, season this with salt & pepper, & toss just until they begin to wilt, about 30 seconds.
  • Step #9 Slice the meat against the grain into thin slices, divide between 2 plates, top this with the greens & the pan juices.
