Coffee Cream Layer Cake Recipe

Ingredients
  • 1 (5 1/4 oz) box vanilla instant pudding mix .
  • 2 c whipping cream (can use 4 c frozen whipped topping, thawed) .
  • 1 tsp hot water .
  • 1/3 c vegetable oil .
  • 1 (18 1/4 oz) yellow butter cake mix with pudding (ingredients follow) .
  • 2 tbsps instant coffee granules .
  • 2 1/2 c milk (can use 2 1/2 c skim milk) .
  • 1 1/3 c water .
  • 1 (3 1/2 oz) box vanilla instant pudding mix .
  • 3 large eggs

Directions
  • Step #1 Prepare yellow, butter-flavored cake mix as follows:.
  • Step #2 Blend dry mix, oil, water, & eggs in large bowl at lowish speed for 30 seconds, then beat at medium speed for 2 mins.
  • Step #3 Pour batter into 2 greased & floured 9-inch, round baking pans.
  • Step #4 Bake at 350° for 20 to 25 mins, or until wooden toothpick inserted in center comes out clean.
  • Step #5 Cool in pans 10 mins; remove this from pans, & cool completely on wire racks.
  • Step #6 Combine pudding mixes & milk In a large-ish mixing bowl.
  • Step #7 Beat at lowish speed with electric mixer 1 min.
  • Step #8 Set aside.
  • Step #9 Beat whipping cream, until stiff peaks form; fold into pudding.
  • Step #10 Divide pudding mixture in half; set aside.
  • Step #11 Top with second layer, & spread with about 1/4 of plain pudding.
  • Step #12 Top with third layer, & spread with remaining coffee-flavored pudding.
  • Step #13 Top with 4th layer.
  • Step #14 Spread with top & sides of cake with remaining pudding.
  • Step #15 Cover up cake, & put in the fridge.
