King Ranch Chicken Casserole Recipe

Ingredients
  • 1 (10 3/4 oz) can cream of chicken soup .
  • sliced fresh cilantro .
  • 3 c sliced cooked chicken .
  • 3 c crushed tortilla chips, divided .
  • 1 (10 oz) can sliced tomatoes & green chilies (Rotel) .
  • 1 (10 3/4 oz) can creamy chicken verde soup .
  • 2 tbsps butter .
  • 1 tsp cumin .
  • 1 tsp chili powder .
  • 1 medium onion, sliced .
  • 2 c shredded cheddar cheese, divided .
  • 1 red bell pepper, sliced .
  • 1 green bell pepper, sliced

Directions
  • Step #1 Preheat oven to 325.
  • Step #2 In medium skillet over medium-high heat, melt butter, Add onion & green & red bell pepper.
  • Step #3 Saute for 8 mins or until tender.
  • Step #4 Stir in chicken, tomatoes & green chilies, soups, chili powder & cumin.
  • Step #5 Cook for 2 mins, stirring every once in awhile.
  • Step #6 Place half of the tortilla chips in bottom of baking pan.
  • Step #7 Layer half of the chicken mixture & half of the cheese on top of the chips.
  • Step #8 Repeat layers.
  • Step #9 Bake, uncovered, for 45 mins or until thoroughly heated.
  • Step #10 Garnish with cilantro to taste.
  • Step #11 Note: Sometimes the Creamy Chicken Verde soup is hard to find (Campbells).
  • Step #12 If you have trouble, Cream of Celery, you can substitute another can of Cream of Chicken soup (or even Cream of Mushroom, etc.
  • Step #13 ).
