Good-for-you Granola Recipe

Ingredients
  • 1/3 c wheat germ .
  • 1 c sliced pecans .
  • 2 1/2 c old fashioned oats .
  • 2 tbsps brown sugar .
  • 1 tsp vanilla .
  • 1 (6 oz) bag dried cranberries .
  • 3/4 c coconut flakes .
  • 1/2 c honey .
  • 1/4 c frozen apple juice concentrate, thawed .
  • 1/2 tsp cinnamon .
  • 2 tbsps sesame seeds (optional)

Directions
  • Step #1 In a 5 qt slow-cooker stir this together oats, nuts, coconut, wheat germ & sesame seeds if using.
  • Step #2 In a microwave safe bowl, vanilla, apple juice, sugar, mix together honey, & cinnamon.
  • Step #3 Microwave for 1 min.
  • Step #4 Pour mixture into slow cooker (aka crockpot) & stir this to mix.
  • Step #5 Cook 1 hr on high without the lid.
  • Step #6 Reduce to low, & cook 4 to 5 more hrs, stirring every once in awhile, cover, or until granola is dry & golden.
  • Step #7 Stir in cranberries & store this in an airtight container.
