Big-taste Grilled Ribs Recipe

Ingredients
  • 2 tbsps prepared brown mustard .
  • 4 lbs lean meaty pork spareribs, cut into 2-rib sections .
  • 1/3 c soy sauce .
  • 1/2 tsp ground cayenne pepper .
  • 1 onion, finely sliced (about 1 c) .
  • 1/3 c sliced fresh ginger .
  • 1/3 c dry sherry .
  • 1/3 c rice vinegar .
  • 2-3 c hardwood chips, for grilling (mesquite) .
  • 1/2 c apricot preserves .
  • 1 tbsp dark sesame oil .
  • 2 large garlic cloves, finely sliced .
  • 1/4 c sugar .
  • 1/2 tsp fresh ground black pepper

Directions
  • Step #1 Carefully cut slits with the tip of a paring knife between ribs so the marinade can penetrate to the meat along the bones.
  • Step #2 Combine ginger, vinegar, onion, garlic, soy sauce, sherry, sugar & black pepper in large bowl.
  • Step #3 Add ribs to marinade; cover & marinate in refrigerator for 8 to 12 hrs.
  • Step #4 Preheat oven to 300°F.
  • Step #5 Lightly oil a roasting pan.
  • Step #6 Remove ribs from the marinade; arrange, bone side up, in single layer in prepared pan.
  • Step #7 Strain 1/4 c marinade & reserve,covered, in refrigerator until using.
  • Step #8 Discard the remaining marinade.
  • Step #9 Bake ribs in preheated 300F oven for 1 1/2 to 2 hrs or until meat is cooked through to the bone & tender.
  • Step #10 Turn the ribs over every 30 mins.
  • Step #11 Meanwhile, mix apricot preserves, sesame oil, mustard, hot red pepper & the 1/4 c reserved marinade in small nonreactive saucepan.
  • Step #12 Bring to boiling.
  • Step #13 Lower heat; simmer for 2 to 3 mins or until slightly thickened.
  • Step #14 Set aside for glaze.
  • Step #15 If grilling, soak wood chips in warm water 30 to 60 mins; drain.
  • Step #16 Prepare grill so coals are hot.
  • Step #17 Sprinkle top chips on coals.
  • Step #18 Or preheat broiler.
  • Step #19 Grill or broil ribs, turning often, for 8 to 10 mins.
  • Step #20 Brush with glaze.
  • Step #21 Cook 8 to 12 mins more, turning until browned.
  • Step #22 Serve hot or warm.
  • Step #23 **Cooking time includes marinating time**.
