Southern Black-eyed Peas Recipe

Ingredients
  • 1 large onion, sliced .
  • 1/2 tsp salt .
  • 1 large ham hock .
  • 2-4 slices bacon .
  • 1/8 tsp cayenne pepper (to taste) .
  • 1/2 tsp garlic powder, minced or 1 fresh garlic clove, minced .
  • 1 lb dried black-eyed peas

Directions
  • Step #1 In a large saucepan, cover peas with water to 3 inches over the peas.
  • Step #2 Bring to boil, reduce heat, then simmer for 45 mins to 1 hr.
  • Step #3 Place ham hock, pepper, sliced onion, bacon, garlic & salt in the slow cooker (aka crockpot)/crock pot.
  • Step #4 Pour in 3 c water.
  • Step #5 Cover up & cook on HIGH until peas are tender & ready to go inches When peas are tender, transfer to the slow cooker (aka crockpot)/crock pot.
  • Step #6 Reduce heat to LOW; cover & cook for 7 to 9 hrs.
  • Step #7 Taste & adjust seasonings.
  • Step #8 Serve with hot cornbread.
