Oat Topped Date Muffins Recipe

Ingredients
  • 1 1/2 c low-fat buttermilk .
  • 1 tsp baking soda .
  • 1/2 tsp salt .
  • 1/4 c quick-cooking oatmeal .
  • 1 c whole wheat pastry flour .
  • 2 tbsps light butter .
  • Topping .
  • 1 tsp baking powder .
  • 2 tbsps canola oil .
  • 1 tsp vanilla extract .
  • 1 large egg .
  • 1 1/4 c dates .
  • 1/3 c packed brown sugar .
  • 1 1/2 c all-purpose flour .
  • 1/2 c sugar

Directions
  • Step #1 Preheat your oven to 400°.
  • Step #2 Lightly spoon flours into measuring c.
  • Step #3 Combine flour sugar & next 3 ingredients.
  • Step #4 Make a well.
  • Step #5 Place buttermilk, egg & vanilla in a bowl & mix with a wire whisk.
  • Step #6 In a food processor/blender put the whole dates 1 1/4 c with the 2 tbsp of canola oil.
  • Step #7 Blend until well sliced then put the dates into the buttermilk mixture & stir well.
  • Step #8 Then pour the wet ingredients into the dry ingredients well; stir just until mixd.
  • Step #9 Spoon batter into 12 muffins c coated with cooking spray.
  • Step #10 Mix packed brown sugar, quick cooking oats & butter together until crumbly (do this with you fingers it works a lot better).
  • Step #11 Sprinkle top over your muffins.
  • Step #12 Bake for 18 mins & let them cool 5 mins in the pan on a wire rack--enjoy.
