Step #1 Preheat your oven to 400°.
Step #2 Lightly spoon flours into measuring c.
Step #3 Combine flour sugar & next 3 ingredients.
Step #4 Make a well.
Step #5 Place buttermilk, egg & vanilla in a bowl & mix with a wire whisk.
Step #6 In a food processor/blender put the whole dates 1 1/4 c with the 2 tbsp of canola oil.
Step #7 Blend until well sliced then put the dates into the buttermilk mixture & stir well.
Step #8 Then pour the wet ingredients into the dry ingredients well; stir just until mixd.
Step #9 Spoon batter into 12 muffins c coated with cooking spray.
Step #10 Mix packed brown sugar, quick cooking oats & butter together until crumbly (do this with you fingers it works a lot better).
Step #11 Sprinkle top over your muffins.
Step #12 Bake for 18 mins & let them cool 5 mins in the pan on a wire rack--enjoy.
