Ingredients
1/4 c ground cinnamon .
1 tsp cayenne pepper .
1 tbsp salt .
8 chicken breast halves, with skin & bones .
8 chicken thighs, with skin & bones .
4 tbsps peanut oil .
1 c all-purpose flour .
1 tsp sugar .
1 c olive oil
Directions
Step #1 Mix first 5 ingredients in small bowl.
Step #2 Place chicken breasts & thighs in 2-gallon resealable plastic bag.
Step #3 Pour oil mixture over; seal bag.
Step #4 Turn bag to coat chicken with marinade.
Step #5 Chill overnight.
Step #6 Preheat oven to 475°F Transfer chicken to rimmed baking sheet, shaking off marinade.
Step #7 Sprinkle top chicken all over with flour.
Step #8 Heat 1 tbsp peanut oil in large skillet over medium-high heat.
Step #9 Working in batches, add chicken to skillet.
Step #10 Cook until golden, adding more oil as needed, about 3 mins per side.
Step #11 Return chicken to baking sheet, skin side up.
Step #12 Roast until cooked through, about 15 mins.
