Cinnamon-roasted Chicken Recipe

Ingredients
  • 1/4 c ground cinnamon .
  • 1 tsp cayenne pepper .
  • 1 tbsp salt .
  • 8 chicken breast halves, with skin & bones .
  • 8 chicken thighs, with skin & bones .
  • 4 tbsps peanut oil .
  • 1 c all-purpose flour .
  • 1 tsp sugar .
  • 1 c olive oil

Directions
  • Step #1 Mix first 5 ingredients in small bowl.
  • Step #2 Place chicken breasts & thighs in 2-gallon resealable plastic bag.
  • Step #3 Pour oil mixture over; seal bag.
  • Step #4 Turn bag to coat chicken with marinade.
  • Step #5 Chill overnight.
  • Step #6 Preheat oven to 475°F Transfer chicken to rimmed baking sheet, shaking off marinade.
  • Step #7 Sprinkle top chicken all over with flour.
  • Step #8 Heat 1 tbsp peanut oil in large skillet over medium-high heat.
  • Step #9 Working in batches, add chicken to skillet.
  • Step #10 Cook until golden, adding more oil as needed, about 3 mins per side.
  • Step #11 Return chicken to baking sheet, skin side up.
  • Step #12 Roast until cooked through, about 15 mins.
