Baked Capsicum (bell Peppers) Recipe

Ingredients
  • salt & freshly ground black pepper .
  • 2 tbsps parsley, sliced .
  • 1/2 c tuna (if canned, then in brine, drained) .
  • 12 black olives, seedless, sliced .
  • 4-5 capsicums (bell peppers, red or yellow) .
  • 1 garlic clove, grated .
  • 1/2 c extra virgin olive oil .
  • 1-2 c fresh breadcrumbs

Directions
  • Step #1 Pre-heat oven to gas mark 4/180C/350°F.
  • Step #2 In a bowl, grated garlic, mix the tuna, black olives, sliced parsley & breadcrumbs until you have a smooth mixture.
  • Step #3 Spice up with salt & pepper.
  • Step #4 Cut the peppers in half & remove the seeds but leaving the stalks intact (they are not edible but they do look attractive & they help the pepper halves to keep their shape).
  • Step #5 Stuff each half with 3-4 tbsp of the mixture.
  • Step #6 Place on a well-greased baking tray.
  • Step #7 Drizzle the top this with olive oil & bake the capsicums in top shelf of the oven for about 45-50 mins.
  • Step #8 Remove from oven & transfer them onto a serving dish, with all the juices from the tray poured over the peppers.
  • Step #9 Drizzle with a little more of olive oil if desired.
