Greek Chicken Casserole With Feta And Prosciutto Recipe

Ingredients
  • 2 garlic cloves, crushed .
  • 1/2 c sliced fresh flat-leaf parsley .
  • cooking spray .
  • 400F g sliced tomatoes .
  • 60 g olives (pitted & marinated) .
  • 60 g low-fat feta .
  • 6 skinless chicken drumsticks .
  • 1 onion, cut into thin wedges .
  • 1 tbsp red wine vinegar .
  • 50 g prosciutto .
  • 100 ml dry white wine

Directions
  • Step #1 Preheat oven to 180°C.
  • Step #2 Heat a large non-stick frying pan, coat the chicken with cooking oil spray & cook over med-heat/flame until golden.
  • Step #3 (Alternatively - roast chicken in the oven until just cooked).
  • Step #4 Place in a casserole dish.
  • Step #5 Coat the onion with cooking oil spray & cook over a low heat until soft.
  • Step #6 Add the garlic & wine & bring to boil, then add the tomatoes, olives & vinegar & and heat through.
  • Step #7 Pour over the chicken, cover & cook in the oven for 50 mins or until the chicken is cooked & tender.
  • Step #8 10 mins before the chicken is cooked, put the prosciutto on a baking tray & cook this until golden & crisp -about 3-5 mins.
  • Step #9 Remove casserole from the oven & stir the parsley through.
  • Step #10 Spice up to taste with salt & black pepper & crumble the prosciutto & feta over the top to serve.
