Chicken Enchilada Soupii Recipe

Ingredients
  • 1/2 tsp ground cumin
  • 2 c shredded Cheddar cheese
  • 1/2 c sliced onion
  • 1 tsp salt
  • 1 c masa harina
  • 1 lb skinless, boneless chicken breast halves
  • 1 quart chicken broth
  • 1 clove garlic, minced
  • 3 c water, divided
  • 1 tbsp vegetable oil
  • 1 tsp chili powder
  • 1 c enchilada sauce

Directions
  • Step #1 In a large pot over med-heat/flame, cook chicken breasts in oil until well browned on all sides.
  • Step #2 Remove & set aside.
  • Step #3 Cook onion & garlic in remaining oil until onions are translucent.
  • Step #4 Pour in chicken broth.
  • Step #5 In a bowl, whisk together masa harina & 2 c water until well mixed.
  • Step #6 Pour into pot with remaining 1 c water, enchilada sauce, salt, Cheddar, chili powder & cumin.
  • Step #7 Bring to a boil.
  • Step #8 Shred cooked chicken & add it to the pot.
  • Step #9 Reduce heat & let simmer 30 to 40 mins, until thickened.
