Step #1 Place a large pot over moderate heat & add extra-virgin olive oil.
Step #2 Work close to the stove & add vegetables to the pot as you chop, in the order they are listed.
Step #3 Add bay leaves & season vegetables with salt & pepper, to taste.
Step #4 Add stock to the pot & raise flame to bring liquid to a boil.
Step #5 Add sliced chicken tenderloins, return soup to a boil, & reduce heat back to moderate.
Step #6 Cook chicken 2 mins & add noodles.
Step #7 Cook soup an extra 6 mins or until noodles are tender & remove soup from the heat.
Step #8 Stir in parsley & dill, remove bay leaves & serve.
Step #9 This is a thick soup.
Step #10 Add up to 2 c of water if you like chicken soup with lots of broth.
