Quick Chick And Noodle Soup Recipe

Ingredients
  • 1 medium onion, sliced .
  • 1 lb chicken breast tenders, sliced .
  • 2 medium carrots, peeled & sliced .
  • 2 bay leaves (fresh or dried) .
  • fresh parsley, sliced (1 hand full) .
  • fresh dill, sliced (1 hand full) .
  • 2 celery ribs, sliced .
  • salt & pepper .
  • 1/2 lb wide egg noodles .
  • 2 tbsps extra-virgin olive oil .
  • 1 parsnip, peeled & sliced .
  • 6 c good quality chicken stock

Directions
  • Step #1 Place a large pot over moderate heat & add extra-virgin olive oil.
  • Step #2 Work close to the stove & add vegetables to the pot as you chop, in the order they are listed.
  • Step #3 Add bay leaves & season vegetables with salt & pepper, to taste.
  • Step #4 Add stock to the pot & raise flame to bring liquid to a boil.
  • Step #5 Add sliced chicken tenderloins, return soup to a boil, & reduce heat back to moderate.
  • Step #6 Cook chicken 2 mins & add noodles.
  • Step #7 Cook soup an extra 6 mins or until noodles are tender & remove soup from the heat.
  • Step #8 Stir in parsley & dill, remove bay leaves & serve.
  • Step #9 This is a thick soup.
  • Step #10 Add up to 2 c of water if you like chicken soup with lots of broth.
