Shrimp Quesadillas Recipe

Ingredients
  • 1 c monterey jack cheese (reduced fat) .
  • 1/2 tsp ground cumin .
  • 1 tbsp fresh cilantro, sliced .
  • 1 small onion, thinly sliced .
  • 1 garlic clove, minced .
  • 4 (8 inch) flour tortillas (fat free) .
  • 1/2 lb fresh white mushrooms, sliced .
  • 1 c fresh spinach leaves, sliced .
  • 3/4 lb large shrimp, pre-cooked, peeled, & deveined .
  • 1/4 tsp salt

Directions
  • Step #1 Remove the tails from the shrimp.
  • Step #2 Spray a non-stick skillet with non-stick spray & set over medium-high heat.
  • Step #3 Add the onion, garlic, cumin & salt.
  • Step #4 Cook, stirring every once in awhile, until fragrant, about 2 mins.
  • Step #5 Stir in the mushrooms & spinach & cook, stirring frequently until softened, 3 to 5 mins.
  • Step #6 Remove from the heat, add the shrimp & cilantro.
  • Step #7 Place a tortilla on a work surface.
  • Step #8 Top half of the tortilla with 2 tbsps of cheese, one-fourth of the shrimp mixture, then 2 tbsps of cheese.
  • Step #9 Flatten & fold over the top half of the tortilla over the filling to form a semi-circle, lightly pressing the edges to seal.
  • Step #10 Repeat with the remaining ingredients, making 4 quesdillas.
  • Step #11 Wipe the skillet clean, spray with non-stick spray, & set over med-heat/flame.
  • Step #12 Add 2 quesadillas & cook this until the cheese melts & outsides of the tortillas are lightly browned, about 4 mins per side.
  • Step #13 Transfer quesadillas to a plate & keep warm.
  • Step #14 Repeat with remaining two quesadillas.
