Almost Alice Chicken Recipe

Ingredients
  • 1/4 c mayonnaise .
  • yellow mustard, may be used for milder version .
  • 3 c shredded colby or monterey jack cheese .
  • parsley (to garnish) .
  • 6 pieces bacon, Sliced in Half & Fried Crisp (I use slab bacon) .
  • 1/4 c light corn syrup (to taste) .
  • 1/4 c honey .
  • 1/2 c Grey Poupon mustard .
  • honey mustard .
  • 1 tsp Spice up-All salt, any brand will do .
  • 1 c sliced mushrooms, fresh sauted in butter .
  • 4 fresh boneless skinless chicken breasts or frozen chicken breasts, 1/2-inch thick .

Directions
  • Step #1 This is my version of "The Outback's" Alice Spring chicken:.
  • Step #2 Rub chicken breast with Spice up All & set aside in refrigerator to marinated for 1 hr or longer.
  • Step #3 While the breast is marinating fry bacon crisp & drain.
  • Step #4 Shred cheese & set aside.
  • Step #5 Prepare Honey Mustard & gather all other items together to assemble.
  • Step #6 Take chicken from marinate & grill over med-heat/flame.
  • Step #7 Cook on both sides until a slight golden color & cooked in the middle but not dry.
  • Step #8 Remove.
  • Step #9 Place in shallow oven proof or microwave proof baking dish.
  • Step #10 Spread chicken breast with honey mustard, cover with a layer of mushrooms, three slices of bacon & then sprinkle with shredded Colby/jack cheese, chicken should be covered with shredded cheese.
  • Step #11 Pop in heated oven at 350 degree's or a microwave just until the cheese melts & browns slightly.
  • Step #12 Sprinkle top with parsley.
  • Step #13 Extra honey mustard may be served on the side.
